Not trying to diss on Skyrim VR, though they really didn't put enough work into it, but B&S should be leagues above it in all forms of combat by this point.
Arrows pierce chainmail reliably and plate armour if you're lucky, you can even block with the bow (try that in real life!).
The only drawback is that bow and arrow take up both large weapon slots on your back.
My trick for aiming is this:
I put my drawing hand behind my head, so that the arrow aligns with my eye, you should be able to look through the arrows head (a glitch). Since U11 you have to aim a little right of the target, add some elevation for range and - PLOING! take'em out.
Well, practice. If the arrow drops short, aim higher. There's a target behind the small tower in the home area, you can practice there.
I'm not really familiar with real life archery, but i'm sure that different bows feel different in real life. Why not pretend it's another bow to get accustomed to? Anyway, shooting the bow accurately can be done in B&S so i dont see why it "sucks".
I would recommend just putting in some hours with the bow, find that unconscious and invisible marker that you can use to aim in your head to direct your shots. There are some bugs you can use to have extra careful aim; but it's probably best you get the legit technique down before that. Good luck!
My experience with real life bows kind of ruins it for me. The arrows drop way too easily. It's as if the bow draws are 10-15 lbs. I would expect arrow drop from a toy bow, not a real one, so the bows in B&S just feel so lacking.
However, if I am indeed doing something wrong, though I fully extend the bow forward, and draw the string to my cheek, if there is something I am missing, I will practice and see if I can figure that out.
That's what armor is for, but this game's armor design is so horrible that a war bow firing probably any sharp arrow would go straight through almost all of them. The only exception are the heaviest armor guys wearing some sort of banded armor, but there are so many gaps on them.
