with the weird feeling weight, it may be because of how you're swinging + with the dampener stuff the other guy talked about. usually the best way to get hard-hitting swings is to get your enemy in a weak stance, by either stunning them by smacking them with something, electrifying them, punching them, or slicing one of their appendages, you can get them open to a really good hit and by proxy stab them in the chest or something if you have a flame-imbued weapon.
spells in general are good for opening an enemy up to a devastating swing or attacking them with one, with all of them serving a different purpose; briefly, lightning is good for getting an enemy into a perfect position to be killed, you can either electrocute them directly or stab them in the arm / leg with an electric weapon; for gravity, you can use it to grab things and throw them at enemies to stun them or to grab one of their appendages / throat to the point of complete defenselessness, you can also push them with it which briefly stuns them; for fire, it's pretty much the best for armored enemies, that's it
i'd recommend practicing parrying and riposting to get a good flow with how animations work and act and also so you can experiment with how to exploit the weaknesses of their armor and weapons and junk
I did not know this was a thing, very epic.
I have issues where limbs like to snap and glitch because of how the game is. I'll be seeing if turning it all down will fix a lot of my problems with the combat.
If you're just jabbing it wont work, you need to pull back and put some weight behind your thrust.
Slices are hit and miss, you need to really need to watch your edge, ensure the flat isn't what you try to cut with. I find using my sword like and axe to hack works well, usually followed by me pulling to slice.
The issue with the shield bashing and kicks is that they use a certain type of damage called blunt light, maces and other blunt weapons use blunt heavy, this is what lets you knock them down. blunt light causes them to be very subdued. used to have a mod called bluntier blunts to fix that, it sadly hasn't been updated from u10.
As for enemies reacting, the recent update overhauled swordplay so that enemies no longer bounce off your blocks, it makes fights much more challenging.
The whole wiggle and your dead is just ♥♥♥♥♥♥ physics being ♥♥♥♥♥♥, nothing we can do about that sadly, just have to get used to being oneshot by an attack that glitched through you

Yeah, i know what you mean, got bruised on several occasions but untill now never really hurt myself or broke anything (not even my controllers).
But what can i tell you? I can pierce leather and even mail with a sword or a spear on my end and whether or not i succeed definitely seems to correlate with the quality of my attack (right distance, correctly executed thrust, good aim, good angle). It´s not like it works every time and IMO it shouldn´t, what would be the point of leather armour then?
And it´s not about you "being weak". Physical strength is not the thing, it´s the correct technique (just like in martial arts or other sports for that matter). And the only way to acquire a technique or skill is by practicing (and maybe receiving advice) and that´s that.
You really want to learn this and can´t get it right yourself? Take some Boxing or Karate lessons, there you´ll learn about how to move "strong" without cramping up and thus slowing down yourself.
In any way, i didn´t mean to hurt your feelings but the issue probably IS on your side. It´s definitley NOT the game. And if you don´t want to know - don´t ask!
