I installed the "ethereal weapons" mod, it gives you a bow with unlimited arrows, so you can spam enemies with arrows from afar. You can also spawn the silver arrows quiver from "medieval mega pack" mod, which contains 1000 arrows (pretty much unlimited, too).
One practical advice (for right eye dominant people like myself, maybe it won't work for you):
Put the hand that holds the arrow behind your headset, so one eye is perfectly aligned with the arrow. You'll see the socket of the arrowhead as a free circle in the arrowhead. This helps a lot with aiming the left-right dimension. Then you "only" need to get the up-down dimension mastered. Which is hard enough, as you have to give the arrow a lead, dependent on the distance. But it is doable!
By now i built muscle memory and can hit torsos almost 100% up to 10m or so without any aiming time at all and maybe 70% at 40m with thorough aiming (hitting at all, not specifical body parts).
Headshot at 20m on a stationary target? Most of the time at first attempt.
The easiest way to shoot a bow in VR is to use sideways stance. I.e. horizontal bow. The arrow will point at he target and then it will be similar to intuitive aim in pistol whip.
The problem is that this sort of thing works best with smaller bows and in blade and sorcery it will be hard to pull the string all the way for maximum distance.
If you try to do proper archer stance, however, your arrow pulling hand can lose tracking, and in that case you likely won't be able to aim properly. Because the cameras are on the front plate of your headset, and you need to pull the string behind your ear, pretty much.
Just this afternoon I downloaded a mod called Spectral Armory (I think the first poster actually referred to this one too, though they called it Ethereal Weapons). This mod allows you to use a spell to more or less instantly summon any of 10 different ghostly weapons into either hand, including a bow. The bow doesn't need arrows or a quiver, just draw and fire.
Oddly, this mod bow I'm able to use MUCH better than the normal bow.. which is really strange, because it literally IS a normal bow. Custom bows cannot currently be made, so the mod is just spawning a stock bow and adding a shader to it to give it the same appearance as the other summoned weapons. I've no idea why I'm able to use this so much more effectively, but it made a massive difference for me. You might consider giving it a shot. If nothing else, it's a really neat spell.
Issue for me is I also play with armour detection on, torso shots are no good for me 90% of the time.
I will keep practising, neglecting archery in VR has become a pain in my ass.
I've had to get used to throwing in most games to replace my ranged attacks, flashy as it is, it doesn't leave much for capacity when you only have 4 holsters.
I've also got MMP installed, I've not tried most of the arrows, the ones I did were super powerful and would just pen everything and that put me off
My main way for the tracking issue has been to push the bow out, while pulling the string back, this helps a little. Horizontal aim just doesn't seem to work for me at all, I'm not sure if it's tracking or what but arrows just seem random when I try.
I'll give the spell mod a go, might save me a bit of cramp if I don't have to grab an arrow after every shot.
I've been using sideways stance in skyrim a lot, and in blade and sorcery it is largely the same. In sideways stance I'd be holding the bow with the left hand and arrow with the right hand, the problem is string length because even if I hold the bow at fully extended arm in front of me, that's still not enough space to fully pull the string.
Blade and sorcery has severe arrow drop compared to skyrim, but aside from that it is largely the same thing as hip-firing in pistol whip using "intuitive aim".
Man do i SUCK at spear throwing!

Can't say I'm great at it. The arrow drop is quite strong and it feels like arrows should fly a bit faster than this. There are also a few amusing moments.

When i do hit, it is so satisfying! I always throw at slo mo and the extra power lifts them clean off their feet! But unfortunately it's really rare and at short distances. And throwing knives/axes: not a single hit in three years of playing.
The original home had a manikin on the second floor and I think there were archery targets too.
Nice garden with an archery range and a space for the chickens, so they don't keep breaking their necks as they walk about the home

I wish this game had a crossbow, though.
And speaking of ranged weapons druidic staff is much more satisfying. Though using it it doesn't give any physical exercise.
I see I'm dealing with a man of fine tastes.
I too wish for a crossbow, doubt we'd get one though, could be odd reloading in VR, unless we get one of the wimpy ones we pull back by hand.
There is a mod that adds the dishonored (Dishonoured. Bugger if I know the spelling for it) crossbows to the game, didn't have enough OOMPH for my tastes though
