For MMP, sure its fun to check out and try 300 different weapons but in the end I only ever ended up using two for what I enjoy. And I much prefer the shorter loading time over those two swords. Instead, I recommend the Albion Swords Master pack [www.nexusmods.com] for a much more condensed pack with some very nice swords to choose from, without the load time increase. Iam not saying do not download and try the MMP, it IS one of the best mods in the game, and you for sure should try it and enjoy the variety, but the pack I recommended is also very good, just condensed.
Sectory was and always has been quite buggy for me and i could never seem to get certain tweaks to stick or play out correctly. I love the idea behind Sectory but there were just too many nuances and conflicts that I couldn't forgive so I no longer use it. On its own its excellent im sure, but its not for me.
Apart from those two common suggestions for new players wanting to mod, I'd highly recommend the following for simple but very fun enhancements:
Blood Effects Overhaul [www.nexusmods.com]
Dark Souls Parrying [www.nexusmods.com]
This one makes it so when you parry a weapon with a customisable amount of force, a sound will play and they will open themselves up for a reposte. One of my top top mods
Butter Stabs [www.nexusmods.com]
Makes stabbing much more realistic (in the way that the enemy models slide into thrusts and away, in the base game they sort of get pushed away when you try to stab, which is annoying) and makes decaps very easy (i keep easy decaps turned off though)
There a Json in that folder that you can tweak to your liking with instructions on how to do so on the nexus mods pages description. I recommend finding the "constantpierce" setting and replacing "true" to "false" as that fixes issues that pop up in the dungeon.

Turning this into a Star Wars game is magic.
For U10 Outer Rim (with Force Sensitive and Ebon Hawk Home addons), I recommend Latent, Force Lightning by Piepop, Jedi Knight Map Pack, High Enitia Tomb, Portable Books (for map selection), Ultimate Star Wars Avatar Pack, and Disarm Squeeze.
For U9.3 Outer Rim (with Force Sensitive and Ebon Hawk addons), I recommend Latent, Force Lightning by Piepop, Jedi Knight Map Pack, High Enitia Tomb, Dark Messiah Arena, Hall of Kings, Portable Books (for map selection), and Disarm Squeeze. I personally recommend U9.3 until a new version brings back Blaster AI and resolves other issues.
You may also need Custom Avatar Framework for the Star Wars models, but I'm not 100% on that.
Medieval Mega Pack: A lot of variety for when you get used to doing dungeon runs and can complete them easily. Using a not so good but different weapon can get you a lot of hours of content. Vanilla weapons generally are worse than good modded ones, because modded ones usually have grab points in the blade, as in, it treats the blade of a sword as another grip, making them much more versatile and interesting to play with. That being said, the actual MVP weapon mod is:
Spiked's Armory: It adds just a few weapons, but they are amazingly well done. I highly recommend the "Rook" sword, it is a great sword, and a great mace if you grab it in reverse, making it super fun against mixed armor enemies.
Ultimate Fantasy Pack: Not a huge fan of the actual weapons it adds, save a few, but it crucially adds fantasy based enemy waves. Its pretty crude since it's mostly different sized humans, but again, variety is key for me. Fighting "goblins" by picking one up and using it as a weapon is a must.
The Outer Rim: The maps suck in my opinion, but having well done lightsabers and jedi/sith enemies is invaluable.
Sectory: Do yourself a favor and read the mod page or some guide, once you tweak it a bit it improves combat 10 fold. It lets you break bones, or cut off limbs without outright killing enemies. I like to have enemies that have around three times the HP of normal ones, but die instantly if you cut/pierce their head. Basically zombies. This one also needs a mod called NonSnappingLimbs for the limb severing to work properly. It's all explained in the mod page. Really, if I could only have one mod, I would have this one. Everything about it can be tweaked/disabled.
Latent: It gives you the force. It's amazingly well done and it's also great at cleaning up enemies you want to despawn, or clutter laying on the ground.
Game Mode Loader: Adds a lot of options when going into a map, such as healing on kill, slow motion on parrying, or being in a Cod gun game of sorts.
Lastly, a list of lightweight mods that are very nice to have, but not so important as to warrant an explanation, I suggest you check their nexus pages. Most of them have absolutely no negatives and are plain quality of life: "Instant Slo-Mo Silent", "Reddit on load", "Dueling Death Pit", "Death Pit Fortress", "Map Overlay Fix", "Spell Wheel Enhancer", "Daggerbending".
