Where do you go to see exactly which version you have?
Trying to download a couple mods, and one of them says you need a certain one for U6, and there's two other different ones for U7b11 LWRP Beta and U7b6 Non-LWRP.

I'm not sure which I'm currently running. I couldn't find a version marker ingame anywhere.

Edit: Or does it not matter if I just use Vortex?

If you're on Steam, you can check the branch you're on in the beta participation tab of the game properties in the game library. But unless you specifically switched to U7 beta branch, you should be on U6.3 which is the current stable release.
