You FOV is "jumping around" because of the debuff you're receiving.
The debuff you receive is insanity, and it can be cured with a healing item. I suggest having a lot of stamina for this fight unless you grind to a higher level before fighting him because he has a lot of health and like you said, he does a lot of jumping around.
If you want to make the fight super easy I suggest investing in magic or firearms. That's what I ended up doing.

What kind of magic did you actually use? I managed in ONCE in one try to interrupt the spawning with melee, but couldn´t figure out how i did it.
Hedron of Light (I think that's what it is called). Maybe I misread what was happening on screen but when I hit him with the missiles from the Hedron it certainly seemed to interrupt him and I didn't get as many hand spawns in my 2nd attempt.
I made it to the Interface, this boss now is the worst PoS for a Melee Build. His one-shot-kill laser that stunlocks me instantly and his claw attacks that damage me, though they go over my head.
