One character carrying the whole team - Am I doing it right?
Every time I try a different strategy, I end up switching back to buffing as much as I can one DPS. Otherwise, my other champions aren't able to kill minions efficiently enough as I progress in an adventure (let's say 75+). Of course, I also have one tank on the front line for when there is a massive amount of mobs.

Is this the usual way to go? If so, are there champions that are better suited for this? (single target aren't really good for this)

Yes, it's the usual way to go, having a damage dealer and every other champions buffing him/her, when your roster is large enough, even your tank is chosen to buff your damage dealer. If you try to spare your strengths, because every numbers are multipliers, you'll end with less damage (if n>2 then x(n^9) > 2x(n^8) ; and multipliers in this game are far bigger than 2)

There is some champions better than others, but the damage potential is way more important than the number of targets, aoe, etc. and should weight for 99.9% on your DPS decision. Anyway, late game, you'll have more firebreath potions than you can use and as familars attack 35 to 100 times quicker than Champions, the number of attacks is not so important. Only armored foes are an exception to that, against them you prefer multihitting same target if possible, but not to detriment your damage potential (the 99.9% above stay true, the 0.1% is for some rare boss with heavy killer or healing mechanics, but the better option against them is a multi-hitting ultimate power (like Donaar's, Corazon's, Krull's, etc. one)).

Can I pick your brain and ask for which Champion you think I should stick for my Carry?

Slot1 (1) : Bruenor [Always chosen]
Slot2 (2) : Celeste; Regis
Slot3 (2) : Nayeli; Gromma
*Slot4 (2) : Jarlaxle; Stoki
Slot5 (2) : Calliope; Dhadius [Calliope everyday, with her bardic inspiration. I wanted to like Dhadius and try and push a magic DPS, and it always fell short]
Slot6 (2) : Asharra; Krond [Depends on my run here. I had much success running Krond as my Carry. Right now I'm trying a different one and Asharra is adding good support]
*Slot7 (1) : Minsc
*Slot8 (2) : Hitch; Delina [Most of the time I take Hitch for support, but he doesn't feel optimal one bit. Delina as the Carry always fell short, sadly. I probably lack synergy]
Slot9 (2) : Makos; Birdsong [Even with decent gear vs gearless, Makos does not deliver once I pass a certain threshold while Birdsong brings more to the table. I still don't understand her that much]
Slot10 (2) : Tyril; Barrowin [Tyril is my go-to tank right now. Even front and center, I gain more DPS than I do with Barrowin. When I can allow myself to put him behind alone, he's even better and I take another tank or no tank at all ~ this never last long]
*Slot11 (1) : Jamilah [The Carry of my run right now. She does well, but I still feel like Krond does better]
*Slot12 (1) : Arkhan (I like the character and sometime use it as a tank, but mostly he's on the bench. I do want to try a run with him as both tank and dps]

After you open a few more time gates, Birdsong will probably be the strongest out of the champions you listed. Dhadius is one of my favorites, but I tend to use him to buff other magic based champions such as Jim.

Never opened a Time Gate. No clue what they are. I know I have 7 out of the 8 pieces it requires though. And I keep getting some pipe-like items Mordon or something.

Right now, I'll try my first party comp based around Arkhan. So far my hopes are very low.

Time Gates are a system for players to unlock heroes from seasonal and other events. You get 1 character per portal and can finish about half of their event achievements. After opening, the portal lasts a few days and the rep you gain will be with Mystra instead of the event rep. The rep still coverts at the end though and you keep the hero that was unlocked.

Interesting! Any hero I should aim to get first?
Deekin or Orkira for slot 1, Freely for slot 7, Avren for slot 11, Zorbu for slot 12. You'll then meet the prerequisite for "Split the Party" which will let you unlock a second adventuring party.

Time gates only cost 6 pieces. You should open one now - a bigger roster is your best source of power early game.

In theory, the best four DPS in the game are Asharra, Zorbu, Artemis, and Krond. Endgame ceiling for Asharra and Zorbu is around z1500, and for Artemis and Krond it is z1800+.

Well, I have Krond. Which champion do you use to boost him?

I'm doing a Portal Event to get that Deekin (no description before unlocking) right now. The more I switch campaign, the more challenging the formation tend to become...

Krond needs strong (Str 16+) and/or Evil champions for his team.

When you open the time gate and finish the adventure to unlock the champion you are seeking make sure you do the other adventures that go to level 75 and 100 or 150. That way you will get chests for that champion's gear right away.

You pretty much got your answer already, but ya, you basically end up with one DPS, however many tanks are needed for the front row and the rest being support. There are a few key DPS champions you'll end up building the formation around. This is the real draw to the game for me. Knowing each champions unique abilities to contribute to that lone DPS power to push further.

I've switched who my main DPS is a few times. Even with the last nerf, I'm still using Asharra. I had to make adjustments to the 2nd bond to keep her working, but it's working. I had to dump more contracts into some champions to bring numbers up, but it's working.

Plenty of articles and posts all over to talk about formation strategies for Asharra, Korbu, Artemis, etc.
