There is a mod where you can select your preferred version. Or you keep a copy of the version you like in the folder - which is the easiest way. Update, remove, duplicate backup, rename it to "Beat Saber" and go for it till next update comes.

I'm ok with internal engine updates, but adding bugs like the pitch not preserved any more in faster o super fast modes, this looks more like a joke !

I don't use native Quest, so I'm not as familiar with the details, but you can downgrade and stay on an earlier version.

It has instructions on how to use it to downgrade your Beat Saber version on native Quest.
