There is a mod where you can select your preferred version. Or you keep a copy of the version you like in the folder - which is the easiest way. Update, remove, duplicate backup, rename it to "Beat Saber" and go for it till next update comes.
Are you really trying to kill this iconic VR game ?
I don't use native Quest, so I'm not as familiar with the details, but you can downgrade and stay on an earlier version.

They've solved the problem in their last patch.
