GlaDOS survived all the scientists attempting to shut her down or as she put it "The engineers tried everything to make me... behave. To slow me down.", it is likely they tried this and she learnt how to counter it (i.e. don't think about it).
The reason why it is likely the liar's paradox is effective against AI in general is because their programming forces them to learn and find explanations and/or answers, to things that happen, attempting to do this with a paradox will result in a continuous loop as the AI will never reach an end point when trying to assimilate this piece of data.
