Fullscreen is already implemented though?

Where?

When I play my taskbar is visible the entire time and there's no option to make it fullscreen in the options menu that I can see. I'm running at 3840x1600

At the initial launch tab (small grey sqaure) where you choose your screen resolution there is a small check box called windowed mode, uncheck the box and increase resolution ;)

Regarding your other issue I would advise just playing it continues for an hour or so, I can imagine you will adjust to the opposite direction within minutes, I've had it before with 1st person shooters being opposite to eachotner, I'm sure it will be normal to you in no time, Just get stuck in.

It's unchecked. That doesn't mean it's full-screen mode. There are several versions of windowed modes that are full-screen stretched.

Nah, they just need to add a Y-axis reverse like every other game out there. Pretty simple, really.
