I just got my first trinket and I was super excited to see what it did. I checked the menu, and it won't let me collect it. Are trinkets useless?

First off, what's changed in the last few updates? I noticed that there's a one heart refill at the end of each level, which is nice. I unlocked a persistent health upgrade that seemingly disappeared when I started another run. Is this normal? What do the trinkets do? I have a few of them, but none of them seem to do anything. ARe there any other persistent upgrades in the game?...
