Dual weilding is impossible*
*without the extra arms or old school mutators. Reloading weapons while dual weilding shouldn't be as easy as reloading a single weapon, but there are two problems that make it flimsey and cumbersome:

-Weapons stay in place. This is way better than them falling on the ground, but it does mean that you can't comfortably reload while dual weilding unless you stop, or go back for the gun later.

-The button to pull out a clip also grabs guns, so when dropping a gun in the air, pressing the trigger to grab a clip can often accidentally regrab the dropped gun.

I suggest some possible solutions:

-A button that hides the weapon in your hand and pulls out a clip. This way you can reload your right gun without having to drop your left one.

-Dropped weapons follow you instead of staying in place

-Instead of having one slot to store weapons, you have one in each hand, so that it becomes viable to carry 2 blue weapons and 1 normal weapon, with an extra slot to hide it and reload, or 2 non blue weapons.

-Spots in your hips or shoulders to store weapons instead of storing them in a single slot with a button.

I'm really enjoying playing the game with only two guns, but dual weilding is so close to being viable that its tantalizing.

you know that you can turn of the guns floating and make them fall to the ground right?
i dual weild revolvers etc and reload by throwing one of the guns in the air and quickly put a new mag in the other.
It takes a little of practice but it feels relalistic and immersive

That does look cool, I might have to try it, but the game doesn't feel designed for that, and doing it while moving would still be a problem.

It is cool and it makes the game so much better but much much harder though. (worth it if you ask me)
That depends on how much you're willing to practice.
This game is supposed to be hard and it definitely is.
There are videos of people doing this while moving and shooting enemies at the same time like it's nothing.
But I totally get what you're pointing out/asking for here.
You want to be able to put weapons in different slots on your body and grab new magazines just as in pavlov/hl:alyx .

That is one of the possible suggestions i have, yes. Alyx does use a weapon system very similar to Compounds Old School mutator, which i think makes weapon management easier in a purposeful and designed manner. I know that the small weapon pool comes with having to make choices, and i like that. Its just that in a medium where you naturally have two hands, it feels like a bit of a waste not being able to dual wield without having to literally juggle.

H3VR has viable dual weilding because you can drop weapons and they go to your belt, so you can drop one pistol, reload the other one, and then grab it again from your belt. It still has the dexterity required and extra time investment of reloading two weapons, but it feels intended and its intuitive.

By the way, in normal mode you can have 3 guns on you at the same time and cycle between them with the A or B buttons, dont remember which one (index)
if you only have 2 guns equipped you can put one away to get one of your hands free

I get you, I do, we all have different preferences. I personally never liked the "bungee chord" weapon slot feature..
For me it breaks the immersion, I like to do it as you do in real life. put one gun manually in its holdster and reload the other.

I know you can have 3 guns, but reloading them is annoying. I decided to just play with 2.

I mostly play with two as well.
But in some areas I like to have one more gun (like the rocket launcher or grenade gun) to progress much more easily

You can fix this specific issue by changing the SteamVR input bindings. Going off memory but I think by default, there are a few different actions that are all bound to the same trigger:
- Grab Weapon
- Spawn Ammo (grab clip)

With the multiple actions bound to the same input, the game will try to "guess" what you want based on context. Just remove the duplicate entries so it's not ambiguous, like set trigger specifically to "Spawn Ammo" and grip to "Grab Weapon".

guess I'm weird for keeping a dedicated pistol that doesn't need to be reloaded yeah the damage isn't the best but reliability is king to me
can still keep two normal weapons on me tho I'm fine with buying time with the pistol while I reload the shotgun
honestly even in old school mode i find myself not dual wielding at all, asides from blast pistol + longer range blue pistol combos
