do you have notepad++ installed? you can use it to view the configuration file; the configuration file should be stored in this directory.
%USERPROFILE%\Saved Games\MachineGames\Wolfenstein II The New Colossus\base\Wolfenstein II The New ColossusConfig.cfg
use the run program to access %USERPROFILE%; copy and paste that in the run command input. you should be able to find the defined key bindings section in the .cfg file and make some sense of it

Open console and write both of these commands seperately (including all the quatation marks):
bind "F1" "g_showhud 0"
bind "F2" "g_showhud 1"
F1 and F2 and available to use and I've been using these myself so I know it works. You can also navigate to the file as mentioned by @cameron and put these on their own lins if they aren't there already. Just remember to use spaces in the commands, I think in the older games the commands had no spaces
Thanks for the heads up. Spent all night tweaking the game, didn't have much time to play after that. I've now confirmed that cutscenes are tied to the loadscreens in that sense and edited the post
