Time limit?

Is there some kind of time limit when choosing choices or can you walk away from your computer (bathroom or kitchen or whatever) and the choices would still be there?

Correct, there is no time limit, although bear in mind that time still passes in-game while you are idle in a dialogue exchange. So if you hypothetically need to get an NPC into a room at a certain time or have two NPCs in the same area via dialogue choices, but go AFK during an exchange, you can potentially "miss" an opportunity to advance in a quest or accomplish your goal. This isn't a game-breaking thing but it can be annoying to some.

Their is a pause, just press the Esc key to bring up the menu page. And it will pause the game.

Correct! However this function is not available mid-dialogue FYI.
