For Visor - anyone you can play, as his only ability is vision... Sorlag again probably, as she can pick up speed fast + has insane stacks - wouldn't pick up Nyx or Scalebearer (one he can see the other one is too slow and too big)
but again, its mostly about your skills, I don't see an issue with galena at all. Maybe because I play her all the time so other galenas seems lame to me.
Galena has so far no real hard counter. If she is good with her totems, you will walk into them. Best advice is to always treat her as having 50 HP more than she can, on demand. So, like a beefy. Otherwise though she has no additional movement skill, no extra passive, nothing on top of it, so if you catch her, you should have at least slight advantage with most characters. It's her arena control presence that is annoying.
By virtue of their stack alone? No, that's not true.
Totems replenish health for you or your team (which if you are thinking correctly are the same). Two totems will put you up to mega levels and since Gelena can cooldown her ability very fast (health and hourglasses do it), she is essentially a very stacked champion.
The counter is awareness.
Visor's ability is very short and has a long CD. Honestly, it's mostly the paranoia he induces in his opponent that works as an extra passive for him.
