You can only do this once for free, though, so use this opportunity wisely. You'll be able to do it later again, but it will require serious amounts of Ultana coins.
If it doesn't show up in the menu you either have it equipped or it already has max stats, not sure about that part.
Transforming your Tyrfing again changes and maybe increases its stats a bit, but also sets it back to +0. It's generally a waste of time since you want to use it to create a much better Paragaon Weapon. In general, doing quests for the goddess statue can give you lots of pretty awesome gear.
It's been a while since I last played it, but if I remember it right the path to a "perfect" Paragon looks at follow:
(optional step for all weapons except for Shields and 1H swords I think, since those two gain new stats they don't previously have)
Except for step 4 all that is achieved by doing goddess statue quests.

I'm guessing I'll just use that 1 time upgrade for the Tyrfing since it's probably the best thing I can get until I finish a goddess quest and get a Paragon weapon. Unless it also works for Paragon weapons and I should save it for that I guess?
Oh yeah and if that 500 material Evolve thing at the blacksmith reverts it to a +0 I don't think I want to do that, thanks.
Not sure whether the blacksmith service works for Paragons since I pretty much wasted this opportunity as well. You could try saving it for step 4.
Then again, the enemy you have to face to get the 1H-Paragon is a fair bit stronger than the monsters you have to defeat for the other Paragons. So a decent +9 Tyrfing certainly can't hurt.
