Hello there,
In my experience, I would recommend you to try to learn the boss movements. Once you learned it, you will find easy to defeat the boss with any type of class.
That in mind, now you should know by sounds when to dodge and when to attack the boss. It will take longer but it will be a fair fight and maybe you will not need to use lots of potions.
I don't know what difficulty you are playing on but if cannot defeat the boss with this recommendation, I would suggest you to put the game difficulty lower.

But yes, I hate that fight too- the janky battle system is the real final boss of Greedfall tho, just like Gothic 2.
i said the same, i died about 2 times, just dogde and keep hitting him when u are near , just keep doge

Had chosen a magician in my first playthrough on normal mode and could do it, so it seems that there are multiple options to be successful.

First things first: Yes, I am aware that this post is 3 weeks old by now and OP most likely succeeded. In case someone in the future has similar problems, I'll throw in my 2 cents as well.
When it starts reaching for its back, that means it'll throw some sort of spear at you. Keep your distance and dodge to the side. It will repeat the throw a few times and then start moving towards you, indicating its ranged phase is over.
Stay clear of the face. It only has frontal attacks and a spin. Strafe to a side and attack with a quick 1-2 combo, then block or dodge to be on the safe side.
Guns work really well against the bugger since then do tremendous armor damage as well as keep you safe. Afflictions of any kind except statis are excellent too, because they work around its huge defenses.
That's it. Play it save, take no risks and it'll be over soon. Check your inventory and merchants for upgrades if you have too much trouble. All in all it's imho a nice, rewarding early boss battle, reminding me of the good old gothic days.
And a little advice for future battles: Much like it was in Witcher 3, try to dodge beasts/animals and parry humans.
