Romance Options
Will having 'Loving' relationship with one companion lock me out of romance with other companions? I'm at the point where one companion is offering to sleep with me and lets just say they aren't someone i'm willing to romance.

You can sleep with them if you want...but if they are not the one for you, I will advise you against getting into a romantic relationship with them. Have a great one!

So I can have 'Loving' relationship with all companions right? I'm asking this just because of achievements, would like to get them in one playthrough.

Can you keep only one love interest as your companion?
You can decline their request when they approach you and remain just friends while pursuing your love interest with the desired companion. This won't affect your reputation with them.
