Whenever a vassal doesn't like their overlord, they get a desire for freedom. When this happens to one of your vassals, and their desire for liberty is 100%, they'll declare independence. You'll get a notification prompting you to declare war or leave them.

When the vassal no longer likes his overlord and wants to declare independence, are there any specific reasons for that?

And is it not possible to stop the desire for freedom (when he is rising) ?

You can try to improve relations. Another factor to rising liberty is when you tax your vassals too much.

My relations with him are good (propably +51) and tax (if you mean tribut), I tried to get them to zero, but DfF still rising.

you could also try to lower the amount of tribute they have to pay. just click on the "vassals" tab on your own country and you should be able to lower their payments.

You can try sending a cash gift to your vassal too.

Depends on how you obtain the vassals too. If you get them through ultimatum, they are more likely to desire liberty than through conquering.

every vassal will at some point break free bc thats how lukasz coded it to be, and it wont be changed because lukasz doesnt care about this game anymore
