How do you conquer countries?
OK.. Just got the game the other day or so.

I've invaded and totally conquered 3 countries; Guatemala, Colombia and Ecuador... I took over all of their land and destroyed all of their armies.

Their land then had the crosshatch design deal showing that they were mine but not core(?) territories.

So I play a few turns and noticed my people are getting more and more war weary and these countries keep asking for peace talks. Well I don't want peace.. I just kick your ass. why do I need peace with you?

I hit 'peace talks' and it brings up a screen on the right that has my country, their country and a couple option under each. Under both is 'offer vassalization' or something.. but why is it a choice for him? And it looks as if I enter in what I want and the computer adds in an offer? Which it doesn't. Do I click the one under my name or under his? I also don't want a vassal... I mean why?

I made peace with one of them and now it's back to it's original country, all my armies got the boot and the population there hates us. So what am I doing wrong?

I don't think I need to make peace or stop a war since I finished it. It's talking over a country and having your countries name written all over it make it yours?

Now I've lost 2 countries I just conquered, and I learned now to save the game before I enter into any peace treaties... Is there a setting I am missing?

When you beat a country, you have to negotiate their surrender. there's a lot of ways you can do this, and as you discovered, you can just as easily give them all their territory back. I'm not going to lie, the interface is needlessly confusing. When you go in to the "demands" screen, you'll see in the upper left that you (and sometimes your enemy) will have "stars" which are points for the war. You "spend" these stars to seize provinces- this keeps some larger, more powerful nations in the game as some territories are more valuable than others. Usually if you've steamrollered a country, you'll have plenty of stars to "buy" all their turf. To do this, simply click on the provinces on the map to change them to your factions' color, and then "send demands". Granted you have enough stars, the game engine accepts the terms, and the country is yours.

A disclaimer of sorts for you as a new player, AoC2 has been abandoned by it's developer, and there are quite a few more serious bugs (such as a dysfunctional save feature, vanishing armies, and economy dropout among others) which have no fixes, and will not be getting fixes. Unless you are enamored with the game in this state, you may wish to consider refunding it while you still can. What you see is what you get- it will never get better than this.

I am going to answer easily with little bad English. :D

First, attack them.
Second, destroy their countries.
Third, than peace talk with them and take all their countries.
And click space bar and enjoy new bigger country. =)
