Xbox multiplayer different?
I remember when playing on the old Xbox, you didn't get a lightsaber when spawning.

There was one lightsaber hidden on the map, and whoever found it would recieve forcepowers as well.

I bought this game out of nostalgia for this game, but the gameplay is very different from how it was on the Xbox.

Is there any way to make the gameplay similar to the Xbox version, or is there a setting that I haven't found?

Yes it is also included in the PC Version. The mode which you're talking about is called "Jedi Master".

You can choose it when you change the "typ"-tab of the game modes:

Just click on it where you can see my mouse cursor.

JK2 does have following mp modes:
- Free for All (FFA)
- Team Free For All (TFFA)
- Capture the Flag (CTF)
- Jedi Master
- Capture the Ysalamiri
- Duel

Try them out. The bots are able to play all of this game modes with you!

I have a question. Did the Xbox Version only include the Jedi Master mode or did you also missed there the other game modes like on the PC Version?

The Xbox version contained all the gamemodes, but all of them were a bit like Jedi Master. There was one lightsaber on the map, which also granted force powers, but everyone were fighting the enemy team. (saber or not)

The bots are more accurate, they insta push if you force choke them and it also has a pretty funny death pose when you choke someone to death in multiplayer.
