a pretty good tip is to red swing right after the opponent red swings, step back so they miss, then step in so you hit.

So to answer your question the lightsaber combat, in both games, operates on a mouse + keyboard combination.
Basically if yoy move one way and your mouse another, you will get different attacks.
Some basic attacks you can practice, that where "beginner" moves, back in the day are:
In blue stance - crouch and then stand whilst moving forward and attacking. This results in an upward uppercut lile thrust, very effective quick attack.
In yellow stance - crouch then jumping in the same spot whilst attacking. This results in a jumping downward swipe, out to the side. A good counter move to a thrust like attack
In red stance - doing an attack, quickly jumping foward and attacking again. This results in a strong foward leap attack that drives the saber downward. If it lands it can sometimes one shot someone and use to be the "fighter fireball - ryu" back when the game was more popular.
Learning these moves will show you how the saber combat generally works as they are a kind of "special attack" for each stance however the do teach the basics of how the mouse + keyboard combat works.
