It's something I'd like to look into adding at some point, but so far it has been lower priority than other requested features.
I'm sorry to hear you've been suffering with headaches. :(
I just bought the game and I'd also like to request an option to make the font size bigger. It's really hard to read no matter the resolution I set it at. Unfortunately, this makes the game unplayable for me because I'm having trouble reading the tutorial instructions.
I urge you to make this a higher priority. The game looks cute and I'd really like to play it :)

Is there any update or change in the last two years on this topic, by chance?
Yes, the update has been released, I can't remember exactly when off the top of my head. Font and image size was increased across a whole bunch of places and blank space was reduced.
I did look into including a general font size option in the menu. However, during my testing I found that often, the UI real-estate limited the size of the font anyway. I'm sure the situation could be improved further so if you have any specific feedback on parts of the UI you have trouble with, I'd be happy to hear that. Especially with the aid of a screenshot. :)
I even tried switching to a smaller resolution so the entire GUI would be larger, but there's no smaller 16:10 resolution option. Is there any way you could add one? If the font can't be made larger, then how about make a smaller res so the font will look larger in fullscreen? The rest of the game will look like crap, but at least you can read it?
I will certainly add this to my list of feedback but I must admit that the game was never really designed with a screen the size of a Steam Deck in mind - the Steam Deck wasn't a thing when the game came out! ;)
