Wealth is, from what I understand, the least interesting one. You can even complete it without ever leaving port if you begin a subsequent captain with a lot of things in your bank. I've never done it myself though. I do not believe you can change ambition.
You don't exactly lose all your progress if you die though. You keep everything in your bank. Companion quests that were completed stay completed (meaning when you recruit them you get the upgraded version). You get to keep a few other things too like equipments or something. You certainly get to keep way more things than you used to be able to do in Sea.
And yes, the Truth and secret ambition have multiple endings.
Ok, so there IS a secret ambition? Is it one I can gain during the game (like colony in Sunless Sea), or is it something you unlock to start with later on?
If you gain it during the game, what quest line should I pursue? Like, at which port should I start looking?
The Serene Mausoleum in Albion, you wanna look for someone who has gone missing. Once you wrap that up the ambition will be available to future captains in that legacy, not your current one though.
