Restrictions don't have to be a bad thing. They can create meaningful choices, which spur creativity and engagement - figuring out which jobs to combine in what ways is a big part of the immense replay value of this version.
But if you really want to, mods for the old board are available. Only you can decide what YOU prefer.
The mods exist. Use them or don't use them, as you please.

The fear u r worried about is not a problem in this game. U will never be stuck or forced to reset in this game because of what jobs u chose. U can also run any combination. U can run 6 Knight/Bushi combos if thats ur desire. Doesn't matter. The only things that r irreplaceable r the rare or one of a kind weapons or items. In other words don't sell certain weapons or equipment like Excalibur or the Genji Gloves and u will be fine.
My only advice is mix it up a little. Variety is the spice of life. The job system is not limiting in a way that u think. If u want a fun mod that adds a bit more freedom here is one I use. It removes the necessity of using Espers to unlock certain upgrades from certain license boards. Now Uhlan for example is quite good since it has access to ALL of its utility.

This version didn't invent jobs. Those were already in the International Version on the PS2 from 2007 (which despite the name was only available in Japan), though this version did add the dual job option.
This remaster is based on the 2007 IZJS version, not the original 2006 PS2 version, which is why it has jobs rather than a unified board. Sure it would have been nice to have additional options to choose from, but at the end of the day that not only costs extra resources for very little payoff, but can also confuse a lot of players who can't tell the difference properly when faced with a choice like that. Just look at FFX and its Standard/Expert Sphere Grid choice - many inexperienced people think that is a much bigger deal than it is and get scared of "making the wrong choice".
While I wouldn't hate the option, I would still choose the Zodiac board. Its better then many of u OG boarders(idfk what to call u) seem to think. The original board is boring and adds nothing but tedious ♥♥♥♥♥♥♥♥♥ to a system that should be automatic. I literally think the Crystarium from 13 is better. Just hold down the button until u r done. Ignore the jack of trades options.
Once again, changes were made a year after the game came out.
