Which one the best sword for my knight / bushi?

I think Masamune bc katana's combo rate ability is deadlier than a powerful single hit per turn attack. Though I could be wrong. I'm not an expert at the game, but thats just from my experience.

Masamune with genji gloves is the best because it does consecutive heavy hits, excalibut on Basch as long as you set him up to hit can do massive single damage. Tournesol..... eh, it looks nice

It depends. Against anything susceptible to Holy, Excalibur + White Robes destroys hard. Kumbha is probably close, and may be better on long fights. Depends on a number of factors.

Against holy-immunes that die in one or two hits, Tournesol is probably best (not a lot of these).

Against sustained damage where you can't use holy, Kumbha is best.

Tournesol takes way too long to farm and is honestly not that great. It's more of a show piece. Just an accomplishment you can do. if I had Knight/Bushi, I would be looking more at Kumbha since you could use a shield. Exceptional damage + great defense. Kumbha, while uses some of the same items a Tournesol requires, is a lot easier to farm.

The problem with Tournesol isn't so much that it's hard to farm (it's not, in fact you can have it earlier than Kumbha) but that it's hard to find a place for it. Since it's Knight only, and Knight also gets Excalibur, the only time you want to use it is against a non-holy weak enemy if you can't also use White Robes, or against holy-immune enemies if you can. That's not a lot of situations for most setups.

It's useful when you ♥♥♥♥ up and select monk as the second job for your knight so you don't have access to White Robes :P

Kanya + Genji Gloves is better damage than Tournesol.
