The only real "this class should always get this esper" IMO is Chuchulin should goto Red Mage.
- The above-mentioned Cuchulainn for Red Mage
- Hashmal for Knight
- Famfrit for Machinist
Of course, all this varies with your job setup, as you can unlock the skills these Espers provide via a second board as well (meaning you wouldn't need the Espers).
You can use the party planning spreadsheet for a convenient overview over what you get on which of your jobs, but do keep cross-job synergies in mind:

gives you a tonne of information about classes and how to assign espers. Some are very easy picks, but some depending on the job combo, aren't that great. But again, depends on your party setup.
