I can't play, because they are using a newer shader to render the shadows and that shader is not supported by my GPU.
My brother is running it just fine he has a much newer PC and an nvidia GPU. Yet the shadows in the game are broken even for him, while he is moving his character, all shadows are flickering.

Check your XMP RAM profile with OCCT.
Start with 10 min test, and if you finish the test without errors, try again but this time run it for 1 hour.
Hunt is very unstable if XMP generate errors.
If OCCT will find errors, decrease your RAM speed 100MHz, and test it again.
Do it till you finish test without errors.
Get yourself a cheap 1050 2GB off eBay it can run the game at 50-60 FPS according to a user on Discord.
Please provide us more information and your specs, maybe the issue is being caused by something else and has nothing to do with your GPU but a other problem with your computer.

The RTX 580 is a mid-range GPU from 2017. Even the GTX 1070 which was released one year before, had around 37% better FPS in games.
What you would expect with new recent games? What would you expect for a mid-range GPU that's already 7 years old.
