Well as already suggested you can either adapt or even look for different guns in the towers .. or you simply leave the mission before the match starts and queue again. That way you don't lose your hunter and you don't waste time to head to an extract.
I prefer to not be able to choose the map and the weather, because if I could choose all that I'd never be at a disadvantage. Middle of the day on the first two maps you'd only encounter players with snipers sitting in bushes who're afraid to make the first move. Fog or night on any map would be shotguns camping every corner of a boss lair or it's surrounding. Yeah sounds like a lot of fun to me.

I don't know when they changed it but it happened twice to me yesterday before I realized what was going on.
That's odd because I managed to leave the mission and keep my hunter two days ago. But even if this would be the case you can still head to an extract so you don't have to play at your disadvantage. But my point still stands that if you could choose the map and weather condition you'd never be at any disadvantage and the matches would become super boring and unfun since you'd only encounter sniper players that sit in bushes during daytime and shotgun campers on weather conditions that have less visibility.
So either way, if you don't want to play with a scope during fog you can always extract if leaving the mission isn't working and queue again if it's so bad for you to be at a disadvantage and you don't want to adapt. That's still a viable option you're having there for not playing at a disadvantage and all it takes you is a few minutes of your time.
This would split the queue. Hunt has far too few players for this, even a functioning matchmaking is not feasible.
You would wait forever for a game.
i know about how the mechanic works. maybe it was a bug, but it's so specific that i'm not sure. the text clearly says your hunter is going to die if you go back to the main menu.
