Fanning; I feel like it's inferior to double action options like dolch/officer carbine, and even shotguns. I get it's supposed to be cheap but you have to farm it on every character, when it feels like serpent, necro and magpie are requirements on every character. Fanning should only cost one/two of the soul points or whatever.
Any lever action outside the winfield swift; they are all worse at levering than the winfield swift and worse at medium range trades compared to double action carbines. If i'm taking long range engagements willingly as a solo, it's with either the lemat or officer deadeye for headshots. There's no reason for me to trade bodyshots in a 10 minute standoff with a 3 stack that has more hp than me.
Breach loaders; fun but clearly outclassed. Clearly better options at close, medium, and long range. Tags require gambling on wallbangs with pistols, meaning you have to run FMJ on secondaries and as a solo, that means your bossing and PVE speed is dramatically riskier and slower.
Alt shotgun ammo; honestly all are just worse than buckshot now. Slugs only give you a little bit of extra range, but don't one shot if you hit shoulders or arms. The fact that you have to ads to shoot a slug is a big problem, and it just feels like a more gambly version of buckshot.
Spectre/Romero are playable but I feel like you need a silenced sidearm and ammo boxes.
There's a very good reason players rarely bring the Martini Henry Ironside: visibility. That magazine takes so much space on your screen that you could easily not see a hunter when aiming.
For the Uppermat, you pretty much summed it up with one exception: while it would be a viable option to bring with say, a shotgun, the Mosin Obrez variants are around the same price range and are just a better option.

Dont understand if you want to say that Pax is better than Scottfield, its all bad or what?
Fanning is a bit of a niche. Some weapons are EXTREMELY good with it, other are not.
The chain pistol act like a sub machine gun... You dont even need to click, just hold fire, did you know? Not the best option, but its possible, lol
Levering: Terminus is my ultimate choice. It´s a Crown and King in a budget.
Bomb Lance really have some steep learning curve, but damn, that weapon is just too much fun, lol
Mosin Obrez is a better option at long range because holds more damage (way more at distance, but only that).
Uppermat is better at close due to faster fire rate, no traits needed to full performance and the shotgun just in case. The poison ammo is OBSCENELY strong vs bosses and prevent players from heal for an eternity...
The rate of fire of the Uppermat is on par with Winfield but you can down players missing a bar at close distances AND you have the shotgun with dragon breath to aply pressure (it´s VERY good using with Sparks), burn people on the ground, the regular shot for holding corners, or slugs if you have good aim and want to improve the one-shot potential.
It´s more versatile IMO, but Obrez is also very Strong.
I usually like to run Obrez with some shotguns (for improved mid range capacity) and Lemat with something like a Lebel or Mosin for better versatility overall. That way you can cover all the distances.
Still the goat, longer melee than a Katana and the projectile gives you a silent shotgun or a pocket explosive
...that takes up half your screen while ADS and is still a worse decision than other options. WF M1873 does most everything ironside does, except the M1873 is only $75. Yeah it's ~300 m range vs ~150 m range, but good luck making a 200+ m shot with iron sights and a 400m/s bullet. I'd rather have better sight picture and 15 rounds loaded and ready to rock

THe katana was a weeb mistake, ultimately it doesn't matter because the baseball bat > all of them
its so good due to being a stamina efficent melee weapon that can be effective against players due to the better range
machette just became a cheap version of this and the katana took the spotlight not to mention when the baseball bat first release it overshadowed every other primary melee choice
Yeah for close range it's good. It's shotgun on the other hand... is terrible. It's only a good option with the LeMat Carbine.
Cavalry saber is really another rare weapon, but i saw one days ago, Machete and Hammer are only in the arsenal, cant even remember the last time i saw one in game.
Baseball bat times ago was the Katana now... Even today is somewhat popular because swings fast and deal with immolators pretty easy.
I would like to see an small nerf on Katana... At least on range...
Aside the Baseball Bat beating Immolators with easy, Katana is just the best melee weapon in the game by miles.
At this moment, even costing a lot more than other weapons it isnt that expensive.
The ONLY thing that can compete with Katana is the Bomb Lance... 3 slot wepon and almost twice the price.
Taking the Winfield part:
Love the M1873 because you have a lot of builds and things that you can do with that weapon. Lots of ammo types, Levering, Talon version, Swift versions and so on.
I also agree with Head Shot distance isnt a thing between those weapons, but damage over range is. It´s not easy to hit people running around with 400 m/s, but at least the MH hit´s like a truck. I killed a guy matches ago using a Winfield Centenial Short (not the silenced version).
FOUR consecutive shots at distance... (its the first time EVER hitting so many shots before they can get cover).
Another thing is the One tap potential. I get a LOT of kills hitting the chest with some weapons. The ''missing bar thing'' is very strong, specially in longer games when some people get downed, get burned, run out of heals and so on...
One match i was using a 1873 Talon (love the Talon version). Rushed into a compound and kill a guy using the melee atack... He was using a Lebel... I finished the monster while a war is happening outside. Lot of kills, sounds of people getting shots and so on.
I swapped for the Lebel. This day i killed SIX guys with just chest shots. Not a single HS.
I dont know how much life they lost in that war, but NONE of then was a HS.
All fair points, I will have to try out the Lebel, I think I used it a few times in the past but I don't remember. But yeah, you do have all valid points
