Great minds think alike.
When playing a close range set-up, I love bringing flashbangs and will never take more than one vitality shot.
For example:
I have "Doctor" = 1x vitality shot, 1x hellfire, 1x frag, 1x antidote
(standard set-up, i run this 75% of the time)
I have "Pitcher" = 1x vitality shot so i can bring more throwables
I have neither pitcher nor doctor, nor frontiersman = 2x vitality shots and no antidote shot
Sometimes when running a long ammo set-up I bring 2 vitality shots, as it's more likely that I need them for good trading (when fighting with long ammo, you tend to get hit hard from other long ammo players, as they are your main threat)
I agree, that one rarely ever needs more than 1, seldom more than 2, especially when you have the doctor trait.
But, when looking at top-tier players, with an equally aggressive playstyle, who also tend to run long ammo set-ups, they usually bring 2 or even 3 vitality shots. Meaning that in a prolonged firefight with enemy teams, they have the upper hand.

First Aid Kit is always on my loadout, with a knife / dusters (depends if i'm running a bayonet)
Sometimes i get to use the second vitality shot, sometimes i don't. But i tend to use my vitality shots more in close quarters than my First Aid. i reserve my First Aid for long range engagements or if a Zomboi gets a lucky hit on me.
On a separate note, if you're the kind of person who likes to get objectives done fast and neat, i can't recommend the Sticky bomb enough, however if you're more inclined towards PvP than objectives, then a second vitality shot or frag is a good choice.
