Once in the early editions this may have been true but over the years the "Greenskins are fungus" thing has become more and more prevalent both in 40k and fantasy. There are even references to the old ones accidentally bringing the orks to this world as spores, and Eltharion, Burning the battle fields after the greenskin invasion to prevent the spores from growing.
So what is canon now? Imo its still canon, you don't have other sources on this matter, because this topic later was never touched by GW. And as was said before we speak about quite long period between 1st and 3rd Warhammer fantasy battle edition+WFRP. And blood bowl is still canon, you have woman orcs models. And on the other hand you have example of selective ork breedeing by Chaos dwarves, which would be impossible, assuming that orcs are mushrooms. Because it is impossible to make black mushroom from a green one and establish a new strand of mycelium (i've never saw that). And nowhere in lore is mentioned that Chaos dwarves are mycologists :p i've never seen the chaos dwarf with petri (or ancient one :p ) dish, but i saw them on pictures with chains and whips which are very useful in creating new mammal species ;)
And you have even gobbos posing as humans womans and wearing fancy dresses ;) Even if this is ridiculous, that was said, maybe in the days of old but it is still a very nice story. Imo much better than everything from 6th edition of WFB to present times.
Sire, please stop mixing 40k with fantasy, these are two diffrent settings. GW long ago abadoned idea to mix these two, or it was never confirmed, even if 40k fans would gladly see this. Maybe they have returned to this in AoS, but AoS in not canon ;)
And by the way i will tell you one very important thing about warhammer, you can never be 100% right about it, because Warhammer world was purposefully created in a way that allows you to your own interpretation. But anyway i still support orcs-closer-to-mammals theory.
