A general truth however is that every unit has difficulty moving around on walls. Also because of that, better melee units sometimes have difficulty overwhelming their enemy as quickly as they would on the open plains.
All that changes how missle units and artiller affect the battle. Almost all of them are quite effective shooting from within at troops on walls.
People have been talking about overhauling sieges for a long while, but I don't know what that would/will look like
Otherwise try for chokepoints in the town. Not all map are good here (like, the 4 way thing is a tumor to defend), but still better than holding the wall.
For most others it's generally not important. But just keep a unit there to activate them and let it shoot for a while before pulling them back.
After that though it becomes a total mess of factors that change how long you should contest the walls for, although as a rule of thumb it's GENERALLY far easier to defend chokepoints within the city compared to the walls, allowing you to get more mileage out of your garrison forces if you withdraw from the walls in short order compared to duking it out on the wall.
Having said that, there are some fringe cases where staying on the wall for extended periods of time (Or even fighting for their control for the duration of the battle) actually ends up being a preferred plan.
