I'm also partial to the Vampire Counts(Mannfred), Azhag or Ikit Claw. Kroq-Gar also works.
In general, my impression is that the newer the DLC, the more they step outside the bounds of the 'traditional' campaign. So the wood elves now has the most unique campaigns - also the Vampire Counts and the newer skaven factiosn (Clan Eshin, Throt (but he's just too horrible), etc.).
Balance that with the factions I *like* and you get my list. :)
Which I've always found more interesting, outmaneuvering and what not.
I do enjoy the idea of Beastmen, Chaos and to a lesser extent Nakai and Norsca as hordes allows for a large amount of freedom on where you go as you aren't as restricted by region control. Nakai being a failed attempt at making hordes more interesting due to your "ally" getting into wars left and right (as well as the LL being bland).
Markus is interesting because of the mechanic. I'd also say Eltharion has a good campaign as it gets you away from Ulthuan (one of the most boring ME locations in my opinion).
Most factions have at least 1 lord that allows for a really fun experience, usually ones that aren't constrained by being in their factions favored region.
Caledor can be fun with his dragon hunts and then an op 20 stack of dragons.
Orcs with their ability to run and raid so easily.
Beastmen I found fun with the ambush and hide playstyle. Unit roster sucks and is boring af though.
VC is fun with raising a terrorghiest in turn 5 if you're lucky.
I like norsca but they're a little out dated.
Worst:
Tomb kings feel boring. Cool roster that takes forever to get to.
Dawi: strong but hella boring (no magic or monsters).
He/reikland/bretonia: boring as they're too easy on anything but legendary lol...

And yeah, I found chaos warriors and Norsca so far awesome. Norsca was just a bit of a slog though. I feel like there could be some adjustments made so they can be more fun in ME.
i do ME coop with a bud, takes forever but it's hell fun. We did a Norsca and High Elves combo - weird right. Severe diplomatic ramifications for the pointy eared bastards.
Busy trying Tomb Kings for the first time and tried Vamp counts - but the counts just really wasn't nice - love the units though.
Eltharion - unleashing the full potential of his mechanics. Vortex is too short for that
Lokhir- Coz an invasion of lothern in first 20 turns is all a dark elf can ask for
Twins- they are new, I like the campaign mechanics. And vortex is too short and small to realise full potential of wood elves and their air force.
Karl Franz - no explanation needed
Vlad (as Isabella faction leader)- Kicking Mannfred's ass and showing him his place never gets old.
Aside form that there are several other I liked a lot too.
The Sisters, I really liked both their campaign mechanics and how they play in the field, I bought the dlc for Clan Moulder, but CA nailed it with them imo.
Karl Franz, I think the elector mechanic is interesting, and since the last patches improved Greenskins and Vampires for the ai, his campaign is quite fun.
Ikit, Skaven are just fun to play as, and Ikit is my favourite by far.
You have many ways of reducing attrition. The first and oldest is the atritiion reduction skill. There's a bloodline unlock that removes 'untainted' attrition. Takes a while before you get that, though. And Kemmler doesn't get untainted attrition at all. There's also some legendary buildings that fix it, I think.
Add to that that with a vampire hero (bonus replenishment), healing skill, and a banshee hero (+movement speed) you recover faster, and need spend less time in attrition areas.
I'd say the vampire attrition is quite manageable now. :)
I also really like the variety in armies - especially the ones of Blood Dragon Lords and Strigoi Ghoul Kings are remarkably different. The number and variety of legendary lords you can recruit is also pretty great.
I will admit that when I play Vampire Counts, I prefer to use two mods - one for 1 extra skill point per level up to lvl 30 - and one for no regen cap. The whole regen cap thing was added later to prevent a multiplayer exploit, and I feel that there is little justification for it in the regular campaign. The extra skill point is because I like having - and facing - powerful lords.

+You can get his weapon damage to around 2000 during battle with some buffs and items. That's satisfying.
1. Imrik - Hands down my favourite campaign. Feels like a great adventure story where Imrik is trying to get the dragons to join his army and then fight his way back to coast and return to Ulthuan and beat back Malekith and the Chaos Invasion. Imrik is also one of the best LL's in the game with one of the best factions, starting positions (Tier 3 Dragon Princes), and most challenging position (no immediate trade opportunity for a HE faction and surrounded by enemies) in the game.
2. Belegar Ironhammer - Warhammer's recreation of the Hobbit.
3. Karl Franz - Managing imperial authority while dealing with the Vampires, Norsca, and Chaos.
4. Tehenhauin - Skaven vs Lizardmen free for all.
5. Drycha - Evil wood elves trying to destroy wood elves and getting Coeddil for the Optimus Pine/Megatree rumble in the magical jungle.
6. Vlad - Vlad is dad. And outcompeting Mannfred for superiority of the Empire is really fun and challenging.
7. Sisters of Twilight - Sisters of Twilight have a super interesting starting point with an inevitable conflict/alliance with either the High Elves (Alith Anar/Tyrion) or the Dark Elves (Malekith/Morathi) and it's really up to you to pick one to side with and one to fight
8. Markus Wulfhart - I love Markus for all the reasons that I love Imrik but it's just less. Great adventure and challenging just trying to survive, but no dragons, no fighting to get to the coast, no tier 3 dragon princes.
9. Wulfrik - Fast paced campaign that lets you take over Norsca quick and then get to the fun part of hunting monsters and being a viking.
10. Ikit - I hate how quickly the Skaven snowball into the late game but Ikit just gives you so many options for expansion without making you completely un-killable like Tyrion.
Honorable Mentions: Alith Anar, Malekith, Alarielle, Eltharion, Grom, Louen, Repanse, Grimgor, Arkhan
It allows you to field multiple, cheap, armies, with the added goal of fighting your way across the Empire and through a few dwarves to take back a mountain peak from some rebels and that one peak is the only place in the world you can recruit orcs.
True, but I like the scrap that greenskins can collect to upgrade units, including poison attacks that do damage over time.
Also, they have ranged units.
Scarsnick also starts with the ability to do lightning strike battles to prevent reinforcements.
It makes for a fun campaign, in my opinion. I love the vampire counts but sometimes just wanting to go WAAAAGH! makes things fun.
