Report a translation problem
Diagnosis: The problem seems to be related to windows resolution scaling. When changing the resolution in game, my pc would try to change the resolution of the display to match. My best guess is that this was causing the game to lose focus (as though I were clicking on a different window) which automatically causes the game to minimize. And it would do this every time I tried to maximize it again.
The Fix:
I'm still not 100% sure why this solved my issue, but I went into Nvidia Control Panel and deselected "GPU Scaling" under Manage 3D setting --> Image Sharpening. With this setting turned off, my display still changes resolution to match the game, but it no longer minimizes so the problem is solved.
