That said, the only thing Greatswords have over Chaos Warriors is their AP damage. Chaos Warriors have better attack, weapon damage, defense, and armor stats than Greatswords. I'm not sure what you're doing wrong in your game, but the numbers don't lie.
Not quite, they wear Dwarf-forged armour and are the best state infantry fighters the Empire has, they don't have the raw strength of a Chaos Warrior obviously but they're highly skilled and not being completely mental is a useful boon too.
From a lore standpoint its groups like Greatswords and Knights that help make the concept that the Empire is still going despite the endless tides of gribblies that attack them year after year actually seem plausible.
1v1 person - your average Greatsword vs your average Chaos Warrior is probably going to see the Greatsword get his head caved in, but unit vs unit is a different scenario, as the cohesion of a trained Greatsword unit is better than a group of Chaos Warriors who are individuals fighting next to each other.
This is why Greatsword units were also able to beat Chaos Warriors on tabletop as well, dice rolls permitting, but in both lore and TT the general idea is that they take a massive beating while doing so but are too stubborn to move back, which is why Chaos Warriors break first. That's always been part of their lore so I've always felt their models should've been far more scarred than they were, despite the preening of the proud troops.
Where this doesn't translate across in the game is a numbers thing. Both Chaos Warriors and Greatswords are meant to be more thin on the ground than the amount generally fielded in the game so it's a little out of whack but it's hard to make a game otherwise.
Balancing is also clearly at play, and they've somewhat made up for the fact that you can't take detachments with the number changes, but it's not really departing from the lore in a particularly egregious way.
They get nommed by Chosen though, as is appropriate.
And their stats are close as well. Like I said, Greatswords have better AP and more models, and Chaos Warriors have better basically everything else.
Greatswords are the personal Guards of the nobility.
Every man a Veteran of the militia, recruited for size, strength, ability and courage.
Armed and Armoured with the best available.
They're Foot Knights in all but name.

WoC are literaly their ideal enemy.
GreatSwords have High Armour, High AP, Anti Infantry
WoC have little AP, High Armour, and are infantry.
All in all, GS are pretty poor, you would never field an army of them like you might executioners or iron breakers or black orcs.
