I'm surprised Dwarves are the most prized after reading that... I suppose it's probably for how much punishment they can endure. Also looks like any Asur is prized.
As far as RP is concerned, there is a great amount of story telling there. Do they get tangled up in the wide web of Druci plots and scemes? Are they willing to sacrifice their principles to survive? There is a ton you can do with it. Mostly drama though... There isn't much room for comedy in the WH universe its self.

skaven are easy, you just give them same kinda life they had until now and they don't even see the difference
vampire count and tomb kings is tricky. Well, tomb kings are kinda sentient, so you can imagine they would make good, immortal labour force slaves if they didn't crumble after losing battle
And zombies, well, dark elves probably know some necromancy to keep them animated and lively
