Personally i find ultra unit sizes "fun".
I stick to large usually. Even if rig can handle 'Ultra'.
The problem is SKaven factions etc., they just have huge number on a battlefield. I played maybe 12-15k the other evening and ... yeah.
I think this is why CA introduced the custom battle lab thing. They needed feedback on what different machines could handle.
If you do Small though, it certainly changes things can make the game more fast paced and intense.
Another thing to consider is tactics. The ballte maps of Total War Warhammer are smaller than they used to be in Rome II and Attila. Bigger unit sizes makes it harder to flank or play guerilia tactics, since a full stack of units sized ultra stretches over mayor parts of the battlefield, giving you less space to maneuver.
Additional,biger unit sizes require a better rig to run smoothly. CPU, GPU, RAM...
I personally play mostly with large unit sizes, since it is a middle ground of the things mentioned above.
so i'd say: go for ultra!
And by cav suck in large i mean even more so than ultra... in ultra they can actually survive a volley of arrows
Because everyone in a unit shoot at the same time, while melee units only fight at the front row.
Melee units will have more chance to get melt by missiles before they come to contact.
