They have a tendency to do more than just bounce off walls. Usually if I try casting a wind spell anywhere near a wall (not actually colliding with it, just near it) it will just go off in some random direction, often as far as 180 degrees away from the direction in which I actually had it pointed. Unless you've got nothing else to use, you just shouldn't use wind spells in siege battles. As juicy as that infantry stack looks for your Wind of Death, it's probably going to go in a direction other than you intend and be a waste of 24 winds of magic.
It should say in the description. Burning head is a wind spell. Every spell that moves in a large straight line is considered a wind spell. There's always some deviance from your line of choice, that's intended. Vortex spells also move out of your control.
The picture you posted looks pretty normal.
I've never seen a wind turn 90 degrees, but maybe in certain circumstances like others have said. I think it's not supposed to deviate more than 20 degrees, which, yes, can often cause it to miss. Be careful when you're placing it, sometimes the angle is hard to read.
