Fryskar is right, you can't change the unit size of an already running campaign.
The change will only take effect in a new campaign, that has been started after the changing of the unit size.
Playstyles that focus on single entity units, like Steam Tanks or Dragons have an advantage on smaller unit sizes.
That's because the unit size gets smaller, which in turn means that single entity units are more powerful.
For example: Let's say a spear unit has 150 men on large and 80 on medium. Now, they have to fight a mighty Dragon. Who has a better chance of defeating this monster? 150 men, or 80 men?
Although single entity units have their health pool reduced, to compensate for the smaller unit size, their attack power is still as high as in "Large" or "Ultra" and now they have to fight fewer enemies.
(Magic get also more powerful on smaller settings.)
If you want to focus on big armies with many units, that can swarm the enemy with sheer mass, like the Skaven, then you should play on "Ultra" or "Large".
This makes big units with many entities stronger against single entity units. (It also looks better in my opinion)
Single entity monsters tend to do a lot worse on ultra unit sizes than they do on large. Especially against hordes of spearmen since it takes a lot longer to reduce their numbers to the point that they break from the terror said monster causes.
I prefer playing on large unit sizes since it feels more balanced for magic and monsters. It also feels more lore appropriate IMO since the more elite units have small unit sizes which makes perfect sense in regards to how many you'd run in the tabletop game vs regular core troops. The other good reason I like large unit sizes is that my fps stays at a solid 60 even during massive 40v40 unit battles against horde races like Skaven. On ultra it can get to the point that fps starts to drop for me.
On the flip side, artillery feels weaker on large than ultra, so take that as you will. It's mostly a preference thing anyways since everything still works fine on ultra.
