Your goal in all things is to peacefully confederate the other dukedoms and move to a full cavalry army. Leave infantry strictly for defensive armies.
Ultimately you want to have an army mostly Questing Knights and Grail Guardians. Bretonnian minor settlements automatically get walls at level 3 so you can build a farm and mill in every settlement to generate stupid amounts of cash.
Bretonnia does not have 'supply lines' so get an extra lord to accompany your army.
With buildings and tech you can have lords and paladins starting at level 15+ by the end.
Don't use prophetesses, use damsels of life where possible as they heal and buff your characters.

Also +1 on the marienburg run and the cavalry spam.
What you want to mass are trebs. Every army should have at least 12 trebs.
Then add in a few paladins and/or knights to protect trebs and win.
