Battle begins with 1st Player army vs AI army, 2nd Player can either watch the battle (and 1st Player can give him his troops to play), or take the AI army under his control.
Even if its called "head to head", you still can make an alliance and fight together, but you cant take AI army under control until alliance is broken.
So you can work together and in the end face each other in massive battle, and also fight each other with AI armies until you make an alliance (then you can reinforce each other and so on).
Personally i think "Head to head" campaign is better, but i recommend to install a mod what changes victory conditions in "Head to head" campaign (capture 100 settlements or kill other player in Vanilla, some mods change it too 400 for example) because it will end fairly quickly if you planning an epic end game.
