Aside from that, cavalry would be your best bet as you will need them to shut down ranged troops. Nasty Skulkers would be useful for sneaking up on artillery and non Eshin ranged units.
The reason for this is that the Orcs haven't received an update yet that would make them equal to other factions like Skavens or the Empire that were recently updated via DLC+Update.
The next Lord Pack will probably be High Elves vs Greenskins, which will bring both factions up to date.
So you're best bet for defeating the Skavens would be to lower the difficulty or wait for the new DLC.
