War Hydra or Kharibydysthingy
On paper the Kharibidysthingy looks better, better stats, poison attacks, anti large. But in battle i see the Hydra doing better i believe due its regeneration and fiery breath. In what situations does the Kharibydysthingy do better at than the war hydra

As others have mentioned. The Hydra is great when it comes to infantry. But the Kharib is more suited to take on large monsters and other high tier single units.

Anti Large also means cavalry? Im guessing based on description.
Also which one is better long term? Considering the fact that other factions barely use Monsterous units and cavalry usually gets pelted by missiles then I would say the Hydra does better but having a Kharibydysthingy would do good too

Why not just both? Lord + Mage + Hydra & Kharybdiss are 4, leaving 16 open for your "main army". 8 inf + 8 ranged, 8 inf + 6 ranged + 2 cav and other combinations.

from a campaign perspective the kharybdiss is largely wasted. As you already noted, your missiles are more than adequate to kill enemy large, and much more versatile. The hydra is better for dicing up infantry, which is what you usually face, and its regen helps prevent the odd bits of damage it sometimes takes. The only real benefits a kharybdiss has are poison, which can be acquired with more useful units like sisters of slaughter, and abyssal howl, which imho isnt worth it vs an AI that's over roided in the LD department anyway.

Hydra is better, but the kharybdiss may have some niche. I'm thinking of an anti leadership army with death sorceress + kharybdiss + discourage ROR darkshards + terror units.

The RoR darkshards have shieldbreaker, not discourage.

Anti Large is a bonus against anything larger than human. IE horses, chariots, constructs and monsters.

Also why not one of each? It's what I do, Hydra for infantry and Kharydbiss for being a counter monster

Because why bother with one of each when HE have more flexible anti-large counters in their roster. Darkshards or shades melt monsters just as well as a kharybdiss and have far more utility vs non-large targets.

Because people like variety and flavour? Darkshards melt everything but I'm not going to have every single army just be a wall of infantry and a dozen darkshards melting everything, gets boring you know?

If you like Min/maxing constantly then you go do that, but don't expect everyone else to do it just because you think they should, try and tone down the pretentious arrogance for a change.

if you really want to use one: see if your army needs an infantry shredder / holder -> normal hydra , or something for anti large -> unspellable hydrathingy.

In my opinion both are worthless for dark elves because both duties are fullfilled equally or better by sisters of slaughter (t3) and dark shards (t1 or 2 depending on your preference).
... well ..that's dark elves summarized "sisters and dark shards do it better" ...

Sisters would get molested to death by enemy archers and dark shards can do the job but the enemy will engage before they will break or be murdered enough. I have not used sisters of slaugther yet as their lack of armour is not enticing to my style of playstyle of "Let the enemy come to me and get murdered by arrows" but most of the time the enemy gets some hits on my frontline and DE spearmen do a good job resisting while sisters would perish in one volley.

Also id like to know how you utilise your sisters of slaughter so maybe i can adapt and use them better
