why do HE archers have no AP dmg?

The sisters of avelorn are armor piercing. Just wait for them.

Idk, for sure, but it's probably something to do with the translation of the tapletop to the digital.

On the TT, arrow hits were not enough to negate armor saves. The arrows could have very well done the job as far as imagination and ambiguity go, as represted by the model being wounded if their roll to 'armor save' fails.

When they made the digital version, the stats all translated differently to deal with many new factors in the game engine. As a feature, Helves probably get magical damage when buffed, and Woodies get the AP. It's all about the faction choice rather than the race, I think.

HE archers have five armour piercing damage per shot, which is about average for bows.

Short version: High Elves got lots of range at release and Dark Elves got lots of AP. So things are kinda balanced. Eagle's Claw bolt throwers have the ranged AP if you need it, and possibly the ranged chariot, I can't remember. One of the built-in weaknesses of the High Elves is rather limited options for AP damage. As has already been mentioned, the new DLC will add some AP archers to their roster, probably for a hefty price.

Because they're not crossbows, arbalests or arquebuses?

Tbh as I see it the greatest likelihood and opportunity for the 'good' Elf races archery to defeat armour are either through incredible accuracy (bypassing/avoiding armour on a target) or specialised arrows. Both are, so far and to this point, the preserve of the Wood Elves and in line with lore and the TT.

All as should be imo.

Because their AP archer variant are sold as DLC. Simple really.

Where did you get 5 from? They only have 3 AP damage.

Table Top,
You roll your armor save on a D6, if the AP is 5 than armor save rolls of 5 or more are not rolled at all cause the armor is defeated.

Note, its been a long time and soo many editions but thats how it worked last time I played.

SFO gives HElf Archers with heavy arrowheads, reduced range and I think ammunition for AP
