Make sure you have regular skinks for your front lines and try to have your red crested skinks hit the flanks or circle them around for a hammer and anvil (charging them from behind while they are engaged with your normal skinks). That is the best way to deal with blobs of rats specifically in the early game since saurus are not really an option.
Another option if you don't or can't flank (to much pressure coming) is to throw your normal skinks with red crested together on the front line. This lets the skinks absorb some or most of the damage while your red crested can dish out a lot of damage. Just gotta make sure to give them support.
Make sure to have some ranged thrown in the mix to soften them up on approach but you always have to be ready for skaven to throw rat spawns on top of your ranged units.
Overall though flanking is a big part of most battles and can be a huge difference in terms of how many units you lose or how many units they lose.
