Those units are also very easy targets for Sisters of Avelorn that should melt them easily.
Arty is easily countered with bolt throwers.
Anyway, you've got monster killer spêcialist in the HE army. the archer hero (handmaiden), the noble hero are two heroes with a massive bonus against large, they can do pretty well against anything large, especially if they're on an horse against an anti infantry monster; the phoenix guards, moon dragons are also some better choice for big baddies (i'm not a huge fan of dragons as high elves though).
The necrofex colosuses are some of the scarriest monsters out there, so you'll want to be particularly warry of those during battles, but you'll eat crab for dinner if any giant crab gets in contact with phoenix guards. I hope you like crab meat, as you'll have some at every meal for a while.
go cheap on the frontline, spearmen will do perfectly fine, a unit or two of white lions can be thrown in to help out vs depth guard, but personally I usually dont even bother with that.
Teclis+2xNobles, or Allarielle+2xNobles gives you a good roving goon and antilarge squad.
Mass archers and cheap cav for the rest of it, maybe with a unit or two of sisters of averlorn. Make it hard for your opponent to get a good engage on you. You can also run bolt throwers, though personalyl im not as much of a fan of these(since im an aggressive player and dont like sitting defending arty)
