Not as impossible as it seems at first.
Focus on flipping scorpions (3 health, 1 damage, webbing) fireflies (shooting in straight line) and hornets (the fliers with melee attack) from "behind", meaning the side opposite to the direction they are attacking. That will make sure the attack hits the Judo instead.
Also, if you have Abe as a pilot, put him in one of the other mechs and use him to block shots too - his armor also counts for the achievement.
The easiest way is definitely to have Abe, like Torus pointed out. That way, you have 2 mechs with armored that block all the shots to get the achievement.
It's a bit more tricky. I got that one by using the boss firefly and getting enemies in his lines of fire.

Right. That achiev is easier to get on lower levels or lower difficulty where vek have 1 or 2 hp. It just takes playing until a map that's easilly controlled.
