What do you mean by AI pilots? Those 2 other starting ones are just regular pilots. If a pilot dies - then mech would be piloted by AI(with no skills, no levels, can't gain XP).
Not always, something like a health-bonus on a self-damaging mech or an extra core for a robot pilot can be a huge advantage.
If a pilot dies, can I assign a human pilot after that mission is over?
What does experience/level do, I havent seen any upgrades.
How do you get power cores to upgrade your mechs when I beat 1 island and I had gotten only 3 power cores?
If you have an extra pilot to spare, you can assign them to the mech with no pilot. Otherwise, the mech is fully functional with an AI pilot, it just doesn't gain XP.
When a pilot gets 25 XP, then 50 XP, they'll level up and get 1 of 4 random traits. +2 HP, +1 movement, +1 reactor, or +3 grid defense. Each pilot can only level up twice and get two of those, and it happens pretty quickly depending on the squad and mech type.
3 is about right. They're a very precious resource, only obtainable from time pods, marked missions on the map with the circle icon, or by spending 3 rep at the end of an island.
If you do not fail a single objective on an island, you'll get a perfect island bonus. This will always offer a special pilot, a weapon, or +2 grid power. If you want reactor cores, you can sell that pilot back for 2 rep, which is a good chunk that'll probably let you get another core.
Naw man, a pilot dies, they're dead and lose all their levels when you start up a new game. You can start with him again, but he's level 1.
And sometimes selling a pilot for a core is a good idea, since sometimes a pilot just doesn't give a good bonus, your mechs can pilot themselves and that core can sometimes be the thing that enables a great new upgrade.

Yes, they can show up randomly during a game, or you can just pick a fresh version of them when starting a new game.
You can find pilots with levels in time pods or get them as a reward for a perfect island bonus.
