Usually you don't have to make a new set/weapon after every monster you beat. Its perfectly fine to stretch your gear to last a few HR/MR ranks. You should still keep an eye out for upgrades though.
If you are in high rank then you would start at rarity 5 weapons and eventually be able to craft up to rarity 8 before going to iceborne and unlocking rarity 9-12. Make sure you are gathering mining nodes and bone nodes from all locales as some of the ??? materials may be stuff from those.
You did say that is what you were using but ok. Well if there's any ??? then you just have to do your assigned quests to unlock them. It's as simple as that.
In post number #3 of this thread you say that you don't see the point of crafting the regular weapon since its 200 dmg lower than the defender weapon. The numerous posts by persons since that post have been trying to set the expectation for you that your gear will not be anywhere near as good as defender gear until you reach the end of high rank hunts.
If you just started high rank you can expect at least a couple dozen hours into the game before you hit that point. High rank is rarity 5-8, thats 4 rarity levels that encompass a good 75% of the base game. You need to throw out any expectation that you will be crafting new weapons/armor after each hunt. The game just isn't designed that way.

was the point of interest for me at least, so, you either gonna need to willingly downgrade yourself, or keep going until the set is obsolete
though yes, i wouldnt expect to make a new weapon after every monster. the defender weapon is just designed to be stronger than the other items you can access at the same time, so most of the things that compete with it will need you to rank up to fight stronger version of monsters.
and dont be scared to build something kinda bad from scratch and upgrade it as you go. some weapons eventually let you directly craft something further down the upgrade path, some dont.
best advice anyone can give is just keep progressing tbh. mh fights are long. its okay for it to start taking longer. its supposed to. as long as you arent bumping into the 50 minute timer you're doing fine.
